I’ve got a party to go to tonight, amongst the many other things I’m going to be running around doing today, and I wanted to make something yummy to take along. Problem: I’m on a diet, and so is the hubby. And we’re really committed to make it stick. Solution: low fat dessert. Yep. You heard me. Low fat dessert.

You know I wouldn’t make anything that didn’t taste yummy. So I’m offering this recipe to those like me who are watching what they eat.

And yeah, I know, yogurt comes in 6 oz containers now, not 8 oz, but you need two of them anyway so you can make the glaze. Just eyeball about a third of the second container to add those extra 2 oz.

Mocha Marble Pound Cake

2 C all-purpose flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt

1 C sugar
¼ C Fleischmann’s margarine, softened
1 tsp vanilla extract
½ C EggBeaters egg product
8 oz low fat coffee yogurt

  • In a small bowl, combine flour, baking powder, baking soda and salt; set aside.

  • In a large bowl, with electric mixer at medium speed, beat sugar, margarine and vanilla until creamy. Add EggBeaters, beat until smooth.

  • With mixer at low speed, add yogurt, alternately with flour mixture, beating well after each addition.

  • Remove half of batter to medium bowl. Beat cocoa into batter remaining in large bowl. (It will be thick, resembling pudding.)

  • Alternately spoon coffee and chocolate batters into greased 9X5X3-inch loaf pan. Cut through batters for marble effect. Bake at 325 degrees for 60 to 65 minutes or until toothpick inserted in center comes out clean.

  • Cool in pan on wire rack for 10 minutes. Remove from pan; cool completely on wire rack. Frost with Mocha Yogurt Glaze.

    Mocha Yogurt Glaze

    ½ C powdered sugar
    1 Tbsp unsweetened cocoa
    1 Tbsp low fat coffee yogurt

  • Mix in small bowl until smooth; add more yogurt if necessary to make spreading consistency.

    It makes 16 servings.


    The best part? If you cut it into the 16 slices recommended, each slice is about 160 calories, 3 g of fat, 215 mg of sodium, 1 mg of cholesterol. Good and… okay, not good for you, but not as bad as a slice of Death By Chocolate.
